Ingredients
- 1 lb beef stew meat
- 1 medium onion
- 3 cloves garlic
- ½ cup rice
- 6 cups beef broth
- ½ cup sour cream
- 2 large eggs
- 3 stalks green onions

In a large pot, heat 1 tbsp oil over medium-high. Add 1 lb beef stew meat and cook until browned on all sides, about 5 minutes.

Add 1 chopped onion and 3 minced garlic cloves; cook until onion is soft, about 3 minutes.

Pour in 6 cups beef broth and 0.5 cup rice. Bring to a boil, then reduce heat to low and simmer until beef is tender and rice is cooked, about 30 minutes.

Meanwhile, hard-boil 2 eggs: place in a saucepan, cover with water, bring to a boil, then simmer 9 minutes. Cool, peel, and halve.
