Kelp Soup

Ingredients

  • ½ oz dried kelp
  • 8 oz tofu
  • 3 stalks green onions
  • 4 cloves garlic
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 2 tbsp vegetable oil
  • 6 cups water

Instructions

    Soak the 0.5 oz dried kelp in 6 cups water for 20 minutes until softened. Reserve the soaking water.

    Slice the kelp into thin strips. Cut the 8 oz tofu into 1/2-inch cubes. Thinly slice 3 green onions and mince 4 garlic cloves.

    Heat 2 tbsp vegetable oil in a pot over medium. Fry half the garlic until golden and crispy, about 2 minutes. Remove and set aside.

    In the same pot, add 2 tsp sesame oil and the remaining garlic. Cook until fragrant, 30 seconds. Add the kelp and 2 tbsp soy sauce, stir for 2 minutes.

    Pour in the reserved soaking water. Bring to a boil, then reduce to a simmer. Add the tofu cubes and cook for 10 minutes until the broth is flavorful and kelp is tender.

    Stir in most of the green onions. Ladle into bowls and top with the crispy garlic and remaining green onions. Serve hot.
