Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • ¾ cup all-purpose flour
  • 2 cups neutral oil for frying

Instructions

    Cut chicken thighs into 1.5-inch bite-sized pieces.

    Toss chicken with soy sauce, mirin, ginger, and garlic in a bowl. Marinate 5 minutes.

    Pour flour into a separate bowl. Dredge each piece of chicken, shaking off excess.

    Heat oil to 350°F in a heavy skillet or Dutch oven over medium-high heat, about 3 minutes.

    Working in batches, fry chicken 4–5 minutes until golden brown and crispy. Don't crowd the pan.
