Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1.5-inch chunks
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp ginger, minced
  • ½ cup mayonnaise
  • 2 tbsp sriracha or chili paste

Instructions

    Mix flour, cornstarch, 1 tsp salt, and 0.5 tsp black pepper in a bowl.

    Toss chicken chunks with soy sauce and minced ginger until coated.

    Working in batches, coat each chunk in the flour mixture, shaking off excess.

    Heat neutral oil in a heavy skillet to 350°F (or until a breadcrumb sizzles immediately).

    Fry chicken in batches 4–5 minutes per batch, turning occasionally, until deep golden and crispy.
