Ingredients

- 1.25 cups water
- ¼ tsp salt
- 3 tbsp vegetable oil
- 2 whole large eggs
- ½ cup crispy wonton strips
- ⅓ cup scallions, chopped
- 3 tbsp hoisin sauce
- 1 tbsp sriracha or chili sauce
- ½ tsp sesame oil

Heat a 10-inch non-stick skillet or crepe pan over medium-high heat. Lightly oil the surface.

Pour 0.5 cup batter into the center and immediately tilt the pan in circular motions to spread into a thin, even crepe.

Cook for 1-2 minutes until the bottom is light golden, then crack an egg onto the crepe and spread it out with a spatula.
