Ingredients

  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1.25 cups water
  • ¼ tsp salt
  • 3 tbsp vegetable oil
  • 2 whole large eggs
  • ½ cup crispy wonton strips
  • ⅓ cup scallions, chopped
  • 3 tbsp hoisin sauce
  • 1 tbsp sriracha or chili sauce
  • ½ tsp sesame oil

Instructions

    Whisk together flour, cornstarch, and salt in a large bowl.

    Gradually add water, whisking until smooth. Let batter rest for 10 minutes.

    Heat a 10-inch non-stick skillet or crepe pan over medium-high heat. Lightly oil the surface.

    Pour 0.5 cup batter into the center and immediately tilt the pan in circular motions to spread into a thin, even crepe.

    Cook for 1-2 minutes until the bottom is light golden, then crack an egg onto the crepe and spread it out with a spatula.

    Cook for another 1-2 minutes until the egg is set but still slightly runny in places.

    Spread 1.5 tbsp hoisin sauce and 0.5 tbsp sriracha across the crepe.

    Sprinkle crispy wonton strips and scallions in the center.

    Fold the crepe in half or roll it up. Drizzle with sesame oil and slide onto a plate.

    Repeat with remaining batter and fillings to make one more crepe.
