Ingredients

- ¼ cup cornstarch
- 1.25 cups water
- ¼ teaspoon salt
- 2 whole eggs
- 2 pieces crispy wonton or youtiao strips
- ¼ cup scallions, chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons oil for cooking
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha or chili sauce
- ½ teaspoon soy sauce

In a large bowl, whisk together flour, cornstarch, and salt.

Gradually add water, stirring until you have a smooth, thin batter with the consistency of crepe batter.

Mix hoisin sauce, sriracha, and soy sauce in a small bowl and set aside.

Heat a 10-inch non-stick skillet or crepe pan over medium-high heat and lightly oil it.

Pour 0.5 cup batter into the center and immediately tilt the pan in a circular motion to spread into a thin, even circle.

Cook for 1-2 minutes until the bottom is set but not brown, then crack an egg onto the surface.

Using a spatula, gently break the yolk and spread the egg over the crepe, then cook for another 1-2 minutes until the egg is mostly set.
