Ingredients

  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1.25 cups water
  • ¼ teaspoon salt
  • 2 whole eggs
  • 2 pieces crispy wonton or youtiao strips
  • ¼ cup scallions, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons oil for cooking
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha or chili sauce
  • ½ teaspoon soy sauce

Instructions

    In a large bowl, whisk together flour, cornstarch, and salt.

    Gradually add water, stirring until you have a smooth, thin batter with the consistency of crepe batter.

    Mix hoisin sauce, sriracha, and soy sauce in a small bowl and set aside.

    Heat a 10-inch non-stick skillet or crepe pan over medium-high heat and lightly oil it.

    Pour 0.5 cup batter into the center and immediately tilt the pan in a circular motion to spread into a thin, even circle.

    Cook for 1-2 minutes until the bottom is set but not brown, then crack an egg onto the surface.

    Using a spatula, gently break the yolk and spread the egg over the crepe, then cook for another 1-2 minutes until the egg is mostly set.

    Place a wonton strip and a pinch of scallions and cilantro on one half of the crepe.

    Fold the crepe in half over the filling and slide onto a plate.

    Drizzle the sauce over the top and serve immediately while hot.
