Ingredients
- 7 oz firm tofu
- 1 medium cucumber
- 1 cup red cabbage
- 1 medium carrot
- 2 sheets nori sheets
- 2 tbsp sesame seeds

Drain and pat dry the 7 oz tofu, then cut into 1/2-inch cubes. Slice the cucumber into thin rounds and shred the carrot and red cabbage into thin strips.

In a large bowl, combine the tofu cubes, cucumber slices, shredded carrot, and shredded red cabbage. Toss gently to mix.

Toast the 2 tbsp sesame seeds in a dry skillet over medium heat until fragrant and lightly golden, about 2 minutes, shaking often.

Cut the 2 nori sheets into thin strips with scissors. Sprinkle the toasted sesame seeds and nori strips over the salad and toss once more.
