Ingredients
- ¾ cup all-purpose flour
- 2 large eggs
- ¾ cup whole milk
- ½ cup jam (apricot or plum)
- 3 tbsp butter
- 1 tbsp granulated sugar
- ¼ tsp ground cinnamon

Whisk flour, eggs, milk, sugar, and a pinch of salt until smooth. Let batter rest for 5 minutes.

Heat 1 tbsp butter in an 8-inch nonstick skillet over medium-high until it foams, about 60 seconds.

Pour 1/4 cup batter into the center; tilt and swirl the pan to spread thin. Cook until the bottom is pale gold, 60–90 seconds.

Flip and cook the other side until set, 20–30 seconds. Slide onto a plate. Repeat with remaining batter.

Spread 1 tbsp jam on each crêpe, fold into quarters, and dust lightly with cinnamon.
