Ingredients

  • 1 cup all-purpose flour
  • 1.25 cups whole milk
  • 2 large eggs
  • 3 medium apples, peeled and sliced thin
  • ½ tsp cinnamon
  • ½ cup maple syrup or honey

Instructions

  1. 1

Whisk flour, milk, eggs, and a pinch of salt until smooth. Let batter rest 5 minutes.

  2. 2

Heat 1 tbsp butter in a large nonstick skillet over medium-high until foaming, ~1 minute.

  3. 3

Pour 1/4 cup batter into the skillet, immediately tilt and swirl to spread thin. Cook until the bottom is light golden, ~90 seconds.

  4. 4

Flip and cook the other side 30 seconds. Slide onto a plate. Repeat with remaining batter.

  5. 5

In the same skillet, melt 1 tbsp butter over medium. Add apples, cinnamon, and a pinch of salt. Cook until soft and caramelized, ~6 minutes.
