Indonesian Fried Rice

Ingredients
- 3 cups cooked rice
- 2 large eggs
- 3 tbsp tomato ketchup
- 2 tbsp soy sauce
- 3 medium shallots
- 3 tbsp vegetable oil

Thinly slice the 3 shallots. Heat 2 tbsp vegetable oil in a large skillet over medium heat and fry the shallots until golden and crispy, about 5 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the remaining 1 tbsp oil. Crack in the 2 eggs and fry until the whites are set but yolks are still runny, about 2 minutes. Transfer to a plate.

Increase heat to high. Add the 3 cups cooked rice, 3 tbsp ketchup, and 2 tbsp soy sauce. Stir-fry until the rice is hot and evenly coated, about 3 minutes.

Divide the rice between two plates. Top each with a fried egg and sprinkle with the crispy shallots. Serve immediately.
