Ingredients

  • 1 lb beef sirloin
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • ½ cup peanut butter
  • ½ cup coconut milk
  • 1 lime
  • 1 cucumber
  • 1 onion

    Slice the 1 lb beef sirloin into thin strips, about 1/4 inch thick. In a bowl, mix 2 tbsp soy sauce and 1 tbsp brown sugar, then toss the beef in the marinade. Let it sit for 10 minutes while you prepare the sauce.

    In a small saucepan, combine the 1/2 cup peanut butter, 1/2 cup coconut milk, remaining 1 tbsp soy sauce, and remaining 1 tbsp brown sugar. Warm over medium heat, stirring, until smooth and slightly thickened, about 5 minutes. Add a squeeze of lime juice if desired.

    Thread the marinated beef onto skewers, dividing evenly. If using wooden skewers, soak them in water for 20 minutes first to prevent burning.

    Heat a grill or grill pan over medium-high heat. Cook the skewers for 2-3 minutes per side, until browned and cooked through, with a slight char. Do not overcrowd the pan; cook in batches if needed.

    While the beef cooks, slice the 1 cucumber and 1 onion into thin rounds. Cut the 1 lime into wedges.
