- 3 medium potatoes
- 1 cup chickpea flour
- 1 teaspoon turmeric
- 1 teaspoon red chili powder
- 1 teaspoon salt
- 2 cups oil
- ½ cup green chutney
- 1 medium red onion

Boil the 3 potatoes until fork-tender, about 15 minutes. Drain, cool slightly, then peel and mash coarsely.

In a bowl, mix the mashed potatoes with 1 tsp turmeric, 1 tsp red chili powder, and 1/2 tsp salt. Shape into 8 small patties.

In another bowl, whisk 1 cup chickpea flour with 1/2 tsp salt and enough water (about 1/2 cup) to make a thick, lumpy batter.

Heat 2 cups oil in a deep pan over medium-high. Dip each patty in the batter, letting excess drip off.

Fry the patties in batches without crowding, turning once, until golden and crisp, about 4-5 minutes per batch. Drain on paper towels.
