Inari Sushi

Sweet and savory tofu pouches filled with seasoned sushi rice, topped with nori and microgreens. A quick, satisfying meal that's perfect for lunch or a light dinner.

Ingredients

  • 1 cup sushi rice
  • 1.25 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 6 pieces inari age (seasoned tofu pouches)
  • 2 sheets nori sheets
  • ¼ cup microgreens

Instructions

    Rinse the 1 cup sushi rice in cold water until the water runs clear. Combine with 1.25 cups water in a pot and bring to a boil.

    Reduce heat to low, cover, and simmer until the water is absorbed and rice is tender, about 15 minutes. Remove from heat and let stand, covered, for 10 minutes.

    In a small bowl, mix 2 tbsp rice vinegar, 1 tbsp sugar, and 0.5 tsp salt until dissolved. Fold this into the warm rice with a spatula, then let cool to room temperature.

    Gently open each of the 6 inari age pouches and stuff with about 2 tbsp of the seasoned rice, pressing lightly to fill the corners.

    Cut the 2 nori sheets into 6 strips each. Wrap one strip around the middle of each stuffed pouch, moistening the ends to seal.

    Top each inari sushi with a few microgreens. Serve immediately or chill for up to 2 hours.

    Optional: drizzle with soy sauce or a sweet glaze before serving if you like extra flavor.
