Ingredients

  • 4 pieces idli
  • ½ cup toor dal
  • 1 cup mixed vegetables
  • 1 tbsp sambar powder
  • ½ cup coconut chutney
  • ½ cup tomato chutney

Instructions

    In a pot, combine 0.5 cup toor dal, 1 cup mixed vegetables, 1 tbsp sambar powder, and 2 cups water. Bring to a boil, then simmer until dal is soft and vegetables are tender, about 15 minutes.

    While sambar cooks, steam 4 idli pieces according to package instructions until fluffy and cooked through, about 10 minutes.

    Serve the hot idli on a plate with 0.5 cup coconut chutney and 0.5 cup tomato chutney on the side. Pour the sambar over or alongside, and garnish with curry leaves and a lime wedge if desired.

    For extra flavor, temper the sambar with mustard seeds and curry leaves in hot oil for 1 minute before serving.
