Ingredients
- 1.5 lb chicken thighs, boneless, skinless, cut into 1-inch pieces
- 10 whole dried red chilies
- 1 medium green bell pepper, chopped
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp cornstarch
- 3 tbsp vegetable oil

In a bowl, toss the 1.5 lb chicken pieces with 2 tbsp soy sauce and 2 tbsp cornstarch until coated. Let sit for 10 minutes.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken in a single layer and cook until golden and crispy, about 6-8 minutes, turning occasionally. Remove and set aside.

Reduce heat to medium and add the remaining 1 tbsp oil. Add the 10 dried chilies, 1 chopped onion, and 4 minced garlic cloves. Stir-fry until fragrant and the onion softens, about 3-4 minutes.

Add the 1 chopped green bell pepper and cook for 2 minutes, until slightly tender but still crisp.

Return the chicken to the skillet. Add the remaining 1 tbsp soy sauce and stir-fry everything together for 2-3 minutes, until the sauce coats the chicken and the vegetables are well combined.
