Ingredients
- 4 corn tortillas
- 4 eggs
- 1 cup tomato sauce
- 1 cup shredded cheese (like cheddar or Monterey Jack)
- 1 avocado
- ¼ cup fresh cilantro

Heat a large skillet over medium-high and add 1 tbsp oil. Fry the 4 corn tortillas one at a time until crisp, about 1 minute per side; drain on paper towels.

In the same skillet, crack the 4 eggs and cook sunny-side up until whites are set but yolks are still runny, about 3-4 minutes.

Warm the 1 cup tomato sauce in a small saucepan over medium heat until bubbling, about 3 minutes.

Place each tortilla on a plate, top with a fried egg, spoon 1/4 cup of the warm tomato sauce over each, and sprinkle with 1/4 cup of the shredded cheese so it melts slightly.
