Ingredients

  • 8 oz feta cheese block
  • 1 lb ripe tomatoes
  • 1 medium cucumber
  • ¾ cup Kalamata olives
  • ¼ medium red onion
  • 3 tbsp olive oil
  • 1.5 tbsp red wine vinegar
  • ½ tsp dried oregano

Instructions

    Cut tomatoes into wedges and cucumber into thick half-moons. Slice red onion paper-thin.

    Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering.

    Cut feta into a 1-inch-thick slab. Sear it 90 seconds per side until edges turn golden and crispy.

    Arrange tomatoes, cucumber, onion, and olives on a plate. Whisk remaining 2 tbsp oil with vinegar and oregano.
