Homemade Tomato Sauce

A quick, fresh tomato sauce made with ripe tomatoes and basil, perfect for pasta, pizza, or as a base for other dishes.

Ingredients

  • 6 medium ripe tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 10 leaves fresh basil leaves
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Score a small X on the bottom of each of the 6 tomatoes. Blanch them in boiling water for 30-60 seconds until skins split, then transfer to ice water and peel.

    Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute, without browning.

    Add the peeled, chopped tomatoes and 0.5 tsp salt. Cook, stirring occasionally, until the tomatoes break down and the sauce thickens, about 10-12 minutes.

    Tear the 10 basil leaves and stir them into the sauce. Season with 0.25 tsp black pepper and adjust salt to taste. Simmer for 2 more minutes until basil is wilted.

    Use immediately or let cool and store in the fridge for up to 5 days.
