Ingredients

- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 tsp fennel seeds
- 1 package sausage casings

In a large bowl, combine the 1 lb ground pork, 1 tsp salt, 0.5 tsp black pepper, 0.5 tsp garlic powder, and 1 tsp fennel seeds. Mix gently with your hands until just combined, about 1 minute.

Rinse the sausage casings under cold water and soak them in a bowl of water for 10 minutes. Then slide one casing onto the sausage stuffer nozzle, leaving a few inches free at the end.

Feed the seasoned meat through the stuffer, filling the casing evenly. Stop when the casing is full, leaving about 2 inches at the end. Twist the sausage into links every 4-5 inches, then tie off the ends with kitchen twine.

Cook the sausages in a skillet over medium heat, turning occasionally, until browned and cooked through (internal temperature 160°F), about 12-15 minutes. Serve hot.
