Ingredients
- 4 chops lamb chops
- 2 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 2 cloves garlic
- ½ cup red wine
- 2 tbsp butter

Pat the 4 lamb chops dry and season both sides with salt and pepper. In a small bowl, mix the 2 tbsp chopped rosemary, 1 tbsp chopped thyme, and 2 minced garlic cloves.

Press the herb mixture firmly onto both sides of the chops. Heat 1 tbsp of the butter in a skillet over medium-high until sizzling, about 2 minutes.

Add the chops and cook until browned and crusty, about 3 minutes per side for medium-rare (or 4-5 minutes for medium). Transfer to a plate and tent loosely with foil.

Pour the 0.5 cup red wine into the hot skillet, scraping up any browned bits. Simmer until reduced by half, about 3 minutes, then whisk in the remaining 1 tbsp butter until the sauce is glossy.

Spoon the red wine sauce over the chops and serve immediately, garnished with extra herbs if you like.
