Ingredients
- 1.5 lbs beef chuck, cut into 1.5-inch cubes
- 1 medium onion, cut into 1-inch chunks
- 1 lb potatoes, cut into 1-inch cubes
- 3 medium carrots, cut into 1-inch rounds
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 serving salt and pepper to taste

Working in batches, sear beef without moving until browned on all sides, ~8 minutes total. Transfer to a plate.

Add onion and carrot rounds to the pot, stirring occasionally, until softened, ~4 minutes.

Pour in broth, scraping up browned bits from the bottom. Return beef and any juices to the pot.
