Ingredients

  • 1.5 lbs beef chuck, cut into 1.5-inch cubes
  • 1 medium onion, cut into 1-inch chunks
  • 1 lb potatoes, cut into 1-inch cubes
  • 3 medium carrots, cut into 1-inch rounds
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 serving salt and pepper to taste

Instructions

    Heat 2 tbsp olive oil in a large pot over medium-high until shimmering, ~90 seconds.

    Working in batches, sear beef without moving until browned on all sides, ~8 minutes total. Transfer to a plate.

    Add onion and carrot rounds to the pot, stirring occasionally, until softened, ~4 minutes.

    Stir in tomato paste until it coats the vegetables, ~1 minute.

    Pour in broth, scraping up browned bits from the bottom. Return beef and any juices to the pot.

    Add potatoes and remaining carrot chunks. Bring to a simmer, then cover and cook until beef is tender, ~30 minutes.
