Ingredients
- 2 large potatoes
- 1 lb sirloin steak
- 1 cup corn kernels
- 1 medium zucchini
- 2 cups baby spinach
- 1 small onion
- 3 tbsp olive oil
- 1 to taste salt and pepper

Grate the 2 large potatoes and 1 small onion into a bowl. Squeeze out excess liquid, then season with salt and pepper.

Heat 2 tbsp olive oil in a large skillet over medium-high. Press the potato mixture into 4 patties and cook until golden and crispy, about 5 minutes per side. Set aside.

Season the 1 lb steak with salt and pepper. In the same skillet, cook to your liking, about 4 minutes per side for medium-rare. Rest for 5 minutes, then slice.

While the steak rests, toss the 1 cup corn kernels, 1 diced zucchini, and 2 cups spinach with the remaining 1 tbsp olive oil and a pinch of salt.
