Ingredients

  • 4 large eggs
  • 4 slice bread slices
  • 8 whole cherry tomatoes
  • 2 tablespoon chives
  • 2 tablespoon butter
  • ½ teaspoon black pepper
  • ½ teaspoon salt

    Place the 4 eggs in a saucepan, cover with cold water, and bring to a boil over high heat. Once boiling, remove from heat, cover, and let sit for 10 minutes.

    Drain the eggs and cool under cold running water for 2 minutes, then peel and slice into 1/4-inch rounds.

    Toast the 4 bread slices until golden and crisp, about 3 minutes. Spread 1/2 tablespoon butter on each slice while still warm.

    Halve the 8 cherry tomatoes and arrange them over the toast, cut side up.

    Layer the sliced eggs over the tomatoes, then sprinkle with the 2 tablespoons chives, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Serve immediately.
