Ingredients
- 1 cup all-purpose flour
- 1 cup whole milk
- 1 large egg
- 2 tbsp butter, melted
- 1 tbsp sugar
- ¼ tsp salt
- 1 cup heavy whipping cream
- 1.5 tsp matcha powder
- 3 tbsp powdered sugar
- ¼ tsp vanilla extract
- ½ cup sweet red bean paste (canned)
- 8 oz fresh strawberries, sliced
- 4 oz fresh raspberries or blueberries

Whisk together flour, milk, egg, melted butter, sugar, and salt until smooth. Let rest 15 minutes.

Strain batter through a fine mesh sieve to remove lumps. The batter should coat the back of a spoon.

Heat an 8-inch nonstick crepe pan over medium-high heat and lightly butter it. Test with a water drop—it should sizzle immediately.

Pour 3 tbsp batter into the center and immediately tilt the pan in a circular motion to coat the entire surface evenly.

Cook 60-90 seconds until the bottom is light golden, then flip carefully with a thin spatula and cook the other side for 20 seconds.

Transfer to a plate. Repeat with remaining batter, stacking crepes as you finish. Makes 8-10 crepes.

Sift matcha powder with powdered sugar into a large bowl to remove lumps. This prevents grittiness in the cream.

Add heavy cream and vanilla extract. Whip with an electric mixer until stiff peaks form, ~2 minutes.
