Ham & White Bean Soup with Rice

Ingredients

  • 1.5 cups diced ham
  • 2 cans (15 oz each) canned white beans (drained)
  • 2 medium carrot, diced
  • 6 cups chicken broth
  • 2 cups cooked white rice
  • 4 pieces flatbread (for serving)

Instructions

    Heat a large pot over medium-high, add diced ham and cook until edges brown, ~3 minutes.

    Add diced carrot and chicken broth, bring to a boil, then reduce heat and simmer 8 minutes.

    Stir in drained white beans and simmer until carrots are tender, ~5 minutes.

    Season with salt and pepper to taste.

    Divide cooked rice among bowls, ladle soup over top, and serve with flatbread.
