Ingredients
- 8 oz halloumi cheese
- 5 oz mixed greens
- 1 cup cherry tomatoes
- ½ cup kalamata olives
- 2 tbsp pine nuts
- ¼ cup pomegranate seeds

Slice the 8 oz halloumi into 1/2 inch thick pieces. Pat dry with paper towels.

Heat a large nonstick skillet over medium-high heat. Add the halloumi slices in a single layer and cook until golden brown, about 2-3 minutes per side. Transfer to a plate.

In a large bowl, combine the 5 oz mixed greens, 1 cup cherry tomatoes (halved), 1/2 cup olives, and 2 tbsp pine nuts. Toss with 2 tbsp olive oil and 1 tbsp lemon juice, season with salt and pepper.

Top the salad with the cooked halloumi and sprinkle with 1/4 cup pomegranate seeds. Serve immediately.
