Ground Lamb Curry

Ingredients
- 1 lb ground lamb
- 1 medium onion
- 2 medium tomato
- 2 whole green chilies
- 3 cloves garlic
- 1 inch ginger
- 1 tsp chili powder
- 1 tsp salt

Heat a large skillet over medium-high. Add the 1 lb ground lamb and cook, breaking it up, until browned, about 8 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the 1 sliced onion and cook over medium until soft and golden, about 6 minutes. Add the 3 minced garlic cloves and 1 tbsp grated ginger, cook for 1 minute until fragrant.

Add the 2 chopped tomatoes and 2 slit green chilies. Cook until tomatoes break down and form a thick paste, about 5 minutes.

Stir in the 1 tsp chili powder and 1 tsp salt. Add the browned lamb back to the skillet, mixing well.

Simmer uncovered over low heat until the sauce thickens and coats the meat, about 10 minutes. Adjust salt to taste. Serve hot.

Optional: stir in a handful of fresh cilantro or a squeeze of lemon before serving if you have them.
