Ingredients

  • 2 fish (about 1 lb each) whole fish (sea bream, branzino, or similar), cleaned and gutted
  • 1.5 whole lemon
  • ¼ cup fresh parsley or dill, chopped
  • 3 tbsp olive oil
  • 2 cloves garlic cloves, minced
  • 1 to taste salt and black pepper

Instructions

  1. 1

Pat fish dry inside and out with paper towels. Season cavity and exterior generously with salt and pepper.

  2. 2

Stuff each fish cavity with half a lemon (sliced), minced garlic, and fresh herbs. Rub exterior with olive oil.

  3. 3

Heat a grill or large skillet over medium-high until very hot. Grill fish 6–7 minutes per side without moving.

  4. 4

Fish is done when flesh is opaque and flakes easily near the thickest part. Transfer to a plate.

  5. 5

Squeeze remaining lemon over fish and garnish with extra fresh herbs. Serve immediately with lemon wedges.
