Ingredients

  • 1 lb steak
  • 4 slice cheese slices
  • 2 sprig fresh rosemary
  • 2 slice bread
  • 2 large eggs
  • 2 tbsp olive oil

Instructions

    Season the 1 lb steak generously with salt and pepper on both sides. Heat 1 tbsp of the olive oil in a skillet over high heat until shimmering.

    Add the steak to the hot skillet and cook for 3-4 minutes per side for medium-rare, or until it reaches your desired doneness. In the last minute, lay the 4 cheese slices on top and sprinkle with leaves from 1 rosemary sprig, letting the cheese melt.

    While the steak rests, toast the 2 bread slices in a toaster or under the broiler until golden. In a separate small pan, heat the remaining 1 tbsp olive oil over medium heat and fry the 2 eggs until the whites are set but yolks are still runny, about 2-3 minutes.

    Place the toasted bread on plates, top with the steak and melted cheese, and add a fried egg on the side. Garnish with the remaining rosemary sprig and serve immediately.
