- 4 slice cheese slices
- 2 sprig fresh rosemary
- 2 slice bread
- 2 large eggs
- 2 tbsp olive oil

Season the 1 lb steak generously with salt and pepper on both sides. Heat 1 tbsp of the olive oil in a skillet over high heat until shimmering.

Add the steak to the hot skillet and cook for 3-4 minutes per side for medium-rare, or until it reaches your desired doneness. In the last minute, lay the 4 cheese slices on top and sprinkle with leaves from 1 rosemary sprig, letting the cheese melt.

While the steak rests, toast the 2 bread slices in a toaster or under the broiler until golden. In a separate small pan, heat the remaining 1 tbsp olive oil over medium heat and fry the 2 eggs until the whites are set but yolks are still runny, about 2-3 minutes.
