Ingredients

  • 1 lb steak (such as sirloin)
  • 1 lb baby potatoes
  • 1 cup tomato sauce
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp salt

Instructions

    Cut the 1 lb baby potatoes in half and toss with 1 tbsp olive oil and 1/2 tsp salt. Roast at 425°F for 20 minutes, until golden and fork-tender.

    While potatoes roast, cut the 1 lb steak into 1-inch cubes and season with the remaining 1/2 tsp salt.

    Heat 1 tbsp olive oil in a skillet over high heat. Add the steak cubes in a single layer and cook for 2-3 minutes per side, until browned and cooked to your liking.

    In a small saucepan, heat the 1 cup tomato sauce with the 2 minced garlic cloves and remaining 1 tbsp olive oil. Simmer for 5 minutes, until slightly thickened and fragrant.

    Serve the steak bites and roasted potatoes with the tomato sauce drizzled over the top. Add black pepper or microgreens if you have them.
