Ingredients
- 1 lb squid, cleaned
- 1.5 lb potatoes
- 3 tbsp olive oil
- 1 lemon
- ¼ cup fresh parsley
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper

Preheat the oven to 425°F. Cut the 1.5 lb potatoes into 1-inch wedges and toss with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread on a baking sheet and roast until golden and tender, about 25 minutes.

While potatoes roast, pat the 1 lb squid dry and season with remaining 1/2 tsp salt and 1/4 tsp pepper. Heat a grill pan or outdoor grill over high heat.

Grill the squid for 2-3 minutes per side until charred and just opaque, being careful not to overcook. Remove and let rest.

In a small bowl, whisk together 2 tbsp olive oil, juice of 1 lemon, 2 minced garlic cloves, and 1/4 cup chopped parsley.

Toss the roasted potatoes with half the dressing. Slice the squid into rings and arrange over the potatoes.

Drizzle the remaining dressing over the squid and potatoes. Serve immediately with extra lemon wedges if desired.
