Ingredients
- 1 lb scallops
- 2 medium onion
- 3 tbsp olive oil
- 1 tbsp butter
- 2 tbsp fresh parsley
- 1 medium lemon
- ½ tsp salt
- ¼ tsp black pepper

Pat the 1 lb scallops dry with paper towels and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

Heat 2 tbsp olive oil in a large skillet over medium-high. Add the scallops in a single layer and cook until golden brown, about 2 minutes per side. Transfer to a plate.

Reduce heat to medium. Add the remaining 1 tbsp olive oil and the 1 tbsp butter to the skillet. Add the 2 sliced onions and cook, stirring occasionally, until soft and deeply golden, about 15 minutes.

Return the scallops to the skillet with the onions. Cook for 1 minute, just to warm through, then remove from heat.

Stir in the 2 tbsp chopped parsley and squeeze the juice of the lemon over everything. Serve hot, with extra lemon wedges if desired.
