Ingredients
- 8 count whole sardines, cleaned and gutted
- 3 tbsp olive oil
- 1 tsp coarse sea salt
- 1 count lemon
- ¼ tsp black pepper

Pat sardines dry inside and out with paper towels. Brush all over with olive oil on both sides.

Heat a grill pan or outdoor grill to medium-high until a drop of water sizzles instantly.

Arrange sardines on the grill without crowding. Season the top side with a pinch of coarse salt and black pepper.

Grill 3 to 4 minutes until edges char and skin blisters. Flip gently and cook the other side 2 to 3 minutes.

Transfer to a plate. Halve the lemon and squeeze juice generously over all the fish. Serve immediately.
