Ingredients

  • 2 6 oz each salmon fillets, skin-on
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp fresh lemon juice
  • 1 clove garlic cloves, minced
  • 2 sprigs fresh thyme sprigs

Instructions

  1. 1

Preheat grill to medium-high heat (around 400°F). Pat salmon fillets dry with paper towels and season both sides with salt and pepper.

  2. 2

Brush grill grates lightly with oil to prevent sticking.

  3. 3

Place salmon skin-side down on the hot grill. Cook for 5–6 minutes without moving, until skin is crispy and releases easily.

  4. 4

Flip carefully and cook for another 2–3 minutes until internal temperature reaches 145°F on a meat thermometer.

  5. 5

In a small skillet, melt butter over low heat. Add minced garlic and fresh thyme, stirring for 30 seconds until fragrant. Stir in lemon juice.

  6. 6

Transfer salmon to serving plates and drizzle warm lemon butter over each fillet. Serve immediately.
