Ingredients

  • 1.5 lb pork ribs
  • 2 cup broccoli florets
  • 2 medium carrots
  • 2 cup cauliflower florets
  • 1 cup tomato sauce
  • 3 tbsp olive oil

Instructions

  1. 1

Preheat grill to medium-high. Toss the 2 cups broccoli, 2 sliced carrots, and 2 cups cauliflower with 2 tbsp olive oil, salt, and pepper. Grill in a grill basket, stirring occasionally, until tender and charred, about 10 minutes.

  2. 2

Season the 1.5 lb pork ribs with salt and pepper. Grill over medium-high heat, turning once, until browned and cooked through, about 8-10 minutes per side. The meat should be firm to the touch and juices run clear.

  3. 3

In a small saucepan, warm the 1 cup tomato sauce with the remaining 1 tbsp olive oil over medium heat until hot, about 3 minutes. Season with salt and pepper.

  4. 4

Serve the ribs with the grilled vegetables and drizzle with the tomato sauce.
