  • 2 large bone-in pork chops
  • 2 medium sweet potatoes
  • 1 bunch scallions
  • 3 tbsp olive oil
  • 1 whole lime
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

    Pat the 2 pork chops dry and season both sides with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp smoked paprika. Let sit at room temperature for 15 minutes.

    Preheat grill to medium-high (about 400°F). Meanwhile, slice the 2 sweet potatoes into 1/2-inch rounds and toss with 2 tbsp olive oil and a pinch of salt.

    Grill the sweet potato slices for 4-5 minutes per side, until tender and charred at edges. Remove and keep warm.
