Grilled Peach & Burrata Salad

Ingredients
- 2 medium fresh peaches, halved and pitted
- 8 oz burrata cheese
- 3 cups arugula
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 to taste salt and black pepper

Heat a grill pan or skillet over medium-high until very hot, about 2 minutes.

Brush peach halves lightly with 1 tbsp olive oil. Grill cut-side down 3–4 minutes until charred and softened.

Whisk together balsamic vinegar, remaining 2 tbsp olive oil, salt, and pepper in a small bowl.

Toss arugula with half the dressing and divide between two plates or a platter.

Top with warm peaches and a ball of burrata. Drizzle with remaining dressing and finish with a crack of black pepper.
