Ingredients
- 2 lb lamb ribs
- ¼ cup soy sauce
- 3 cloves garlic
- 1 whole lime
- 1 medium onion
- 1 medium red bell pepper
- 1 whole green chili
- ¼ cup cilantro

In a small bowl, mix 1/4 cup soy sauce, 3 minced garlic cloves, and 1 tbsp olive oil. Brush the mixture over 2 lb lamb ribs and let sit for 10 minutes.

Preheat grill to medium-high. Grill the ribs for 12-15 minutes per side, turning once, until browned and cooked to your liking (internal temp 145°F for medium).

While ribs cook, thinly slice 1 onion, 1 red bell pepper, and 1 green chili. Place in a bowl and squeeze the juice of 1 lime over them; toss to combine.
