Ingredients

  • 2 lb lamb ribs
  • ¼ cup soy sauce
  • 3 cloves garlic
  • 1 whole lime
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 whole green chili
  • ¼ cup cilantro

Instructions

  1. 1

In a small bowl, mix 1/4 cup soy sauce, 3 minced garlic cloves, and 1 tbsp olive oil. Brush the mixture over 2 lb lamb ribs and let sit for 10 minutes.

  2. 2

Preheat grill to medium-high. Grill the ribs for 12-15 minutes per side, turning once, until browned and cooked to your liking (internal temp 145°F for medium).

  3. 3

While ribs cook, thinly slice 1 onion, 1 red bell pepper, and 1 green chili. Place in a bowl and squeeze the juice of 1 lime over them; toss to combine.

  4. 4

Remove ribs from grill and let rest for 5 minutes. Slice between the bones.

  5. 5

Top the ribs with the onion-pepper mixture and sprinkle with 1/4 cup chopped cilantro. Serve with extra lime wedges if desired.
