Ingredients
- 1.5 lb flank steak
- 3 tbsp olive oil
- 1 whole lemon
- ½ cup fresh cilantro
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper

Pat the 1.5 lb flank steak dry and season both sides with 1 tsp salt and 0.5 tsp black pepper. Let sit at room temperature for 15 minutes.

In a small bowl, mix 2 tbsp olive oil, the zest and juice of 1 lemon, and 2 minced garlic cloves. Set aside half for serving.

Heat a grill or grill pan over high heat. Brush the steak with the remaining 1 tbsp olive oil and place on the grill.

Grill the steak for 4-5 minutes per side for medium-rare, until it has nice char marks and feels firm but springy when pressed.

Transfer the steak to a cutting board, drizzle with the reserved lemon-garlic mixture, and let rest for 5 minutes.

Slice the steak thinly against the grain and sprinkle with 0.5 cup chopped cilantro. Serve with extra lemon wedges if desired.
