Grilled Fish with Roasted Vegetables

Ingredients
- 4 filets fish fillets
- 1 bunch radishes
- 2 medium zucchini
- 8 oz mushrooms
- 4 stalks scallions
- 3 tbsp olive oil
- 1 whole lemon
- ½ cup feta cheese

Preheat oven to 425°F. On a large baking sheet, toss the halved radishes, sliced zucchini, and whole mushrooms with 2 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender and browned at edges.

While vegetables roast, pat the 4 fish fillets dry and season both sides with salt and pepper. Heat a grill pan or outdoor grill over medium-high heat.

Brush the fish with the remaining 1 tbsp olive oil. Grill the fish for 3-4 minutes per side, until it flakes easily with a fork and has nice grill marks.

When vegetables are done, remove from oven and toss with sliced scallions and juice of half the lemon. Season with more salt if needed.

Serve the grilled fish over the roasted vegetables. Crumble the 1/2 cup feta cheese over the top and squeeze the remaining lemon half over everything before serving.
