Ingredients
- 4 filets fish fillets
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 2 medium tomatoes
- 2 tbsp fresh parsley

Pat the 4 fish fillets dry with paper towels. In a small bowl, mix 1 tsp paprika, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper.

Rub the spice mixture evenly over both sides of the fish fillets. Drizzle with 1 tbsp of the olive oil and let sit for 5 minutes.

Preheat a grill or grill pan over medium-high heat. Brush the grill grates with 1 tbsp olive oil to prevent sticking.

Place the fish fillets on the hot grill. Cook for 3-4 minutes per side, until grill marks appear and the fish flakes easily with a fork.

While the fish cooks, dice the 2 tomatoes and chop the 2 tbsp parsley. In a small bowl, toss with the remaining 1 tbsp olive oil and a pinch of salt.
