Ingredients

  • 4 filets fish fillets
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 medium tomatoes
  • 2 tbsp fresh parsley

Instructions

  1. 1

Pat the 4 fish fillets dry with paper towels. In a small bowl, mix 1 tsp paprika, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper.

  2. 2

Rub the spice mixture evenly over both sides of the fish fillets. Drizzle with 1 tbsp of the olive oil and let sit for 5 minutes.

  3. 3

Preheat a grill or grill pan over medium-high heat. Brush the grill grates with 1 tbsp olive oil to prevent sticking.

  4. 4

Place the fish fillets on the hot grill. Cook for 3-4 minutes per side, until grill marks appear and the fish flakes easily with a fork.

  5. 5

While the fish cooks, dice the 2 tomatoes and chop the 2 tbsp parsley. In a small bowl, toss with the remaining 1 tbsp olive oil and a pinch of salt.

  6. 6

Remove the fish from the grill and let rest for 2 minutes. Serve hot, topped with the fresh tomato mixture.

  7. 7

Garnish with extra parsley if desired. Enjoy immediately.
