Ingredients
- 2 boneless, skinless chicken breasts
- 2 sesame seed buns
- 2 cups shredded coleslaw mix
- 3 tbsp mayonnaise
- ½ red onion
- ½ cucumber
- 1 tbsp yellow mustard
- 1 tbsp olive oil
Instructions
- 1
Season the 2 chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a grill pan or skillet over medium-high heat until shimmering, about 2 minutes.
- 2
Grill the chicken for 6-7 minutes per side, until golden grill marks appear and the thickest part reaches 165°F. Transfer to a plate and let rest for 5 minutes.
- 3
While the chicken cooks, make the slaw: in a bowl, combine 2 cups coleslaw mix, 2 tbsp mayonnaise, and a pinch of salt. Stir until evenly coated.
- 4
Thinly slice 0.5 red onion and 0.5 cucumber. In a small bowl, mix the remaining 1 tbsp mayonnaise with 1 tbsp mustard to make a spread.
- 5
Toast the 2 sesame buns in the same pan over medium heat until golden, about 1-2 minutes. Spread the mustard-mayo mixture on the cut sides of each bun.
- 6
Slice the rested chicken and pile onto the bottom buns. Top with the slaw, red onion, and cucumber. Close the sandwiches and serve immediately.
- 7
For extra flavor, add a sprinkle of paprika or a few fresh herbs like rosemary to the chicken before grilling.
