Ingredients
- 1.5 lb chicken drumsticks or thighs (skin-on)
- 2 tbsp annatto paste (or 1 tsp annatto powder mixed with 1 tbsp oil)
- 1 tbsp fresh ginger, minced
- 1 whole lime (juiced)
- 3 tbsp soy sauce
- 4 clove garlic, minced

Mix annatto paste, ginger, lime juice, soy sauce, and garlic in a small bowl.

Pat chicken dry. Arrange on a sheet pan and coat both sides with the annatto marinade.

Position oven rack 6 inches from broiler. Heat broiler to high.

Broil chicken 7 minutes skin-side up until edges char and glisten.

Flip and broil another 6–8 minutes until skin crackles and meat is cooked through.
