Ingredients

  • 4 pieces (about 1.5 lbs) chicken thighs, boneless & skinless
  • 1 whole (juiced + halves for serving) lime
  • 1 bag (about 20 oz) frozen french fries
  • 1 cup (prepared or leftover) white rice, cooked
  • 2 cups green cabbage, shredded
  • ½ cup hot sauce or salsa

Instructions

    Pat chicken dry with paper towels. Season both sides generously with salt, pepper, and minced garlic.

    Heat oil in a large skillet over medium-high until it shimmers. Lay chicken thighs flat and sear without moving for 5 minutes.

    Flip chicken, squeeze lime juice over top, and cook 5 more minutes until internal temp hits 165°F and skin is golden.

    While chicken cooks, bake fries according to package directions and toss shredded cabbage with a pinch of salt and lime juice.
