Ingredients
- 1 lb calamari (bodies and tentacles)
- 1 cup plain Greek yogurt
- ½ cup fresh herbs (parsley, mint, or dill), chopped
- 1 whole lemon
- 1 whole green chili, thinly sliced
- 3 tbsp olive oil

In a small bowl, mix the 1 cup Greek yogurt, 1/2 cup chopped herbs, juice of 1/2 lemon, and a pinch of salt. Set aside.

Pat the 1 lb calamari dry. Toss with 2 tbsp olive oil, salt, and pepper.

Heat a grill or grill pan over high heat. Grill calamari in a single layer, about 2 minutes per side, until charred and just opaque.
