Ingredients

  • 1.5 lb ground beef (80/20)
  • 4 burger buns
  • 4 cheddar cheese slices
  • 8 bacon slices
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp vegetable oil

Instructions

  1. 1

Preheat grill to medium-high (about 400°F). If using charcoal, arrange coals for direct heat.

  2. 2

Cook the 8 bacon slices in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels.

  3. 3

In a bowl, gently mix the 1.5 lb ground beef with 1 tsp salt and 0.5 tsp black pepper. Form into 4 patties, about 1 inch thick.

  4. 4

Brush the patties with the 1 tbsp vegetable oil. Place on the grill and cook for 4-5 minutes per side for medium, until nicely charred and internal temperature reaches 160°F.

  5. 5

During the last minute of grilling, place 1 cheese slice on each patty and close the grill lid to melt the cheese.

  6. 6

Toast the 4 burger buns cut-side down on the grill for 1-2 minutes until golden.

  7. 7

Assemble burgers: place each patty on a bun bottom, top with 2 bacon slices, and cover with the bun top. Serve hot.
