Ingredients

  • 1.5 lb beef steak (such as sirloin or ribeye)
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 3 cloves garlic
  • 1 tsp black pepper
  • 1 tsp five-spice powder
  • 2 tbsp vegetable oil
  • ½ cup cilantro

Instructions

    In a small bowl, mix 2 tbsp fish sauce, 1 tbsp brown sugar, 3 minced garlic cloves, 1 tsp black pepper, and 1 tsp five-spice powder until the sugar dissolves.

    Pat the 1.5 lb steak dry and rub the spice mixture all over both sides. Let it sit at room temperature for 20 minutes to absorb the flavors.

    Heat 2 tbsp vegetable oil in a cast-iron skillet over high heat until shimmering, about 2 minutes.

    Place the steak in the hot skillet and cook without moving for 4-5 minutes, until a deep brown crust forms.

    Flip the steak and cook for another 4-5 minutes for medium-rare, or until it reaches 130°F internal temperature.

    Transfer the steak to a cutting board and let it rest for 5 minutes, tented loosely with foil.

    Slice the steak against the grain into thin strips and garnish with 0.5 cup fresh cilantro leaves before serving.
