Green Pasta with Shrimp

Ingredients
- 8 oz pasta
- 12 oz shrimp, peeled and deveined
- 1 cup fresh basil leaves
- ½ cup grated Parmesan cheese
- 3 tbsp olive oil
- 2 cloves garlic cloves

Cook the 8 oz pasta in salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, blend 1 cup basil, 1/4 cup Parmesan, 2 garlic cloves, and 2 tbsp olive oil in a food processor until smooth, scraping down as needed.

Heat 1 tbsp olive oil in a skillet over medium-high. Add 12 oz shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from skillet.

Return pasta to the pot, stir in the basil sauce, adding reserved pasta water a little at a time until the sauce coats the pasta nicely.

Divide pasta among plates, top with shrimp, and sprinkle with remaining 1/4 cup Parmesan. Serve immediately.
