Green Pasta with Chicken and Broccoli

Ingredients
- 12 oz pasta
- 1 lb chicken breast
- 3 cups broccoli florets
- 4 cups spinach
- ½ cup Parmesan cheese
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 12 oz pasta and cook until al dente, about 10 minutes. Reserve 1 cup pasta water, then drain.

While pasta cooks, heat 1 tbsp olive oil in a large skillet over medium-high. Season the 1 lb chicken breast with 0.5 tsp salt and cook until golden and cooked through, about 6 minutes per side. Rest, then slice.

In the same skillet, add remaining 1 tbsp olive oil and 2 minced garlic cloves. Sauté until fragrant, about 1 minute. Add 3 cups broccoli florets and 0.5 tsp salt; cook until bright green and crisp-tender, about 5 minutes.

In a blender, combine 4 cups spinach, 0.5 cup Parmesan, and 0.5 cup of the reserved pasta water. Blend until smooth, about 30 seconds.

Return the drained pasta to the pot. Add the sliced chicken, broccoli, and the spinach sauce. Toss over medium heat, adding more pasta water if needed, until everything is coated and heated through, about 2 minutes.
