Ingredients
- 1 lb green beans
- 2 medium potatoes
- 2 medium carrots
- 1 medium onion
- 3 medium tomatoes
- 3 tbsp olive oil

Trim the ends off 1 lb green beans and cut them in half. Peel and dice 2 medium potatoes and 2 medium carrots into 1-inch chunks. Dice 1 medium onion and 3 medium tomatoes.

Heat 3 tbsp olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.

Add the potatoes, carrots, and tomatoes. Stir and cook for 3 minutes until the tomatoes start to break down.

Add the green beans and 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer until vegetables are tender, about 20 minutes. Season with salt and pepper to taste.
